The polyphenol content in Olive Oil is analysed using Nuclear Magnetic Resonance (NMR), the most precise method for measuring polyphenols in olive oil. While NMR testing is costly, it is the gold standard for accurately verifying high-phenolic olive oil.
The concentration of oleocanthal in EVOO can vary significantly depending on multiple factors, including the olive variety, the geographic location of the trees, the maturity of the olives at the time of pressing, and the cultivation and production methods used.
Research conducted at ULM and Hunter College of New York (Cornell University) has explored the potential effects of oleocanthal on Alzheimer’s disease and cancer cells, highlighting its promising role in health and disease prevention.
